Getting the right infusion time and the right water temperature are just as important as measuring the tea correctly. Too little time and the tea will taste like water. Too much time and the tea will be very bitter. Each tea comes with a recommended infusion time range. Start at the middle and adjust to your taste. Likewise water below boiling will not yield the full flavor of a black tea, while boiling water can destroy an oolong , green, or white tea. Follow the recommendations for each tea carefully. Many people who believe they don't like green teas have never really had a cup that was properly prepared!
